I have been looking at some different defect tracking tools recently and came across Mantis and it is my favourite. Like it as it is simple to configure as is done via config files. I really like config files and is really easy to add more statuses and customise the workflow. I find a lot of open source defect tracking tools are built be developers for devlopers and once the defect is past dev it is over no System Testing, Regression Testing or User Testing.
I had it up and running on a VM within about 30 min and after an afternoon of exploring it was really liking it and had it working how I wanted a defect tracking tool to work for me.
